The force of patience

In the summer of 2006 we made our first steps towards achieving a dream – the creation of our own wine home, where with knowledge and skills gained through the years, with perseverance and hard work, we could create our wine.

Over the years we used different places for vinification – two years in the village Bratia Daskalovi, ten years in Plovdiv, until February 2020, when we moved to our new winery in the village of Brestnik, 5 km from Plovdiv, where we intend to happily grow old…

All these years we have been motivated only by the thought of creating wines with a style – with uncompromising quality, revealing the potential of Bulgaria’s microregional terroir, vinified with friendly technological practices and mainly produced from local grape varieties – Rubin, Mavrud, Dimyat and blends with their presence

For its 14 years of existence the name DRAGOMIR became a synonym for quality and we intend to develop this trend with every vintage to come.

The new wine home of Dragomir Winery Estate is a modern, avant-garde building, which is technologically designed according to our requirements and perfectly corresponds to the style of our wines. The production capacity is up to 90 000 bottles per year, mainly red wines. The winery is supplied with last-generation equipment and barrels of the highest quality. The tasting room is integrated in the production area and while enjoying the wine you can also observe some of the technological process.

The Vine and the Grapes

Red grapes

In 2017, we planted 23.94 ha of vineyards in the land of the village of Svirkovo, South Sakar, with the varieties Rubin, Cabernet Sauvignon, Cabernet Franc, Merlot, Syrah, Petit Verdot.

The vineyard is nestled in the hills of South Sakar and surrounded by oak forests. The soils are leesified, cinnamon forest – extremely suitable for red grape varieties and wines suitable for aging.

Winemaking and

In Dragomir Winery Estate the harvest is planned after monitoring of the technological parameters of the grape – sanitary condition, sugar, acidity, pH, phenolic content.
After determing the technological maturity for every grape variety, we do manual harvest, in small cases. The grapes are transported to the winery and are stored over a night in a cooling chamber at less than 8°С. On the next day the grapes are sorted in order to eliminate all the bad bunches and berries, the next step is destemming and then transfer to:

In the press for pressing and only the extracted juice is transferred into vats (stainless steel tanks or oak barrels) for fermentation. The fermentation is carried out under severe temperature control and lasts 20 – 30 days. After fermentation the wine is racked and transferred in barrels or stainless steel tanks for partial malo-lactic fermentation and aging. During a period of this aging a periodic batonnage is applied (stirring the fine lees of the wine)

Red wine technology:

fermentation vats (stainless steel tanks or oak barrels). The fermentation includes three steps: Cold maceration: 10 – 12 days at 8 – 10 ºС – for extraction of coloring matter and wine aromas. Alcoholic fermentation: 10 – 15 days at 24 – 28 ºС – the yeast turns sugar into alcohol Post-fermentation vatting – the wine stays in contact with the solid parts – forming the structure of the wines

Maturation of the wine:

When the wine is ready, it is drained and after racking, the barrels are filled or the wine is transferred to another stainless steal tank for malo-lactic fermentation. Depending on the wine category the next step is aging in barrels from 12 to 36 months During a period of this aging a periodic batonnage is applied (stirring the fine lees of the wine). The end of the aging comes with a tasting aiming the creation of the final blends. Next is bottling and bottle maturation.
